What better way to celebrate Pancake Day than with a juicy stack of pancakes! And if made right, they're also the perfect post-workout meal. We caught up with instructor and vegan 'chef' Sophie Thorpe to bring you two of her favourite Pancake recipes.
Both are vegan and free from refined sugar BUT you wouldn't know it, they're PACKED full of flavour, sweetness and the toppings makes them extra nutritious.
Tropical Pancakes
Ingredients:
1 cup plant milk - we love all Plenish milks (Digme members get 20% OFF here)
1 tsp apple cider vinegar
1 cup self raising flour (you could use half SR / half buckwheat or spelt)
1 tsp baking powder
1 tsp bicarb of soda
1 tbsp melted coconut oil
1 tsp vanilla
For the toppings:
Mango
Banana
Coconut flakes
Maple syrup
Blueberries
Passionfruit
- Whisk the apple cider vinegar and plant milk together then leave for 10 mins. This makes vegan buttermilk.
- Add the melted coconut oil and the vanilla to the buttermilk.
- Mix the flour, baking powder and bicarb of soda together.
- Add wet ingredients to dry and mix till just combined.
- Pour some of the batter into an oiled pan and cook for 2 or 3 minutes. Flip and cook the other side.
- The mixture should make 4 large pancakes.
- Put all your toppings on and you're good to go – yum!
Chocolate and Raspberry Pancakes
Ingredients:
3/4 cup plant milk (almond soy or oat all work well) - Plenish milks are best (Digme members get 20% OFF here)
1 tsp apple cider vinegar
1 tsp vanilla extract
1/2 tbsp coconut oil
3/4 cup self raising flour
1/2 tsp baking powder
1/2 tsp bicarb of soda
1 scoop vanilla vegan protein powder (optional!) - Innermost is our fave and Digme members get 10% OFF with DIGME-10.
Handful raspberries
Handful dark or dairy free choc chips
Chocolate sauce:
1 tbsp coconut oil
2 tbsp cacao or cocoa powder
3 tbsp date syrup
2 tbsp almond milk
- Whisk the apple cider vinegar and plant milk together then leave for 10 mins. This makes vegan buttermilk.
- Add the melted coconut oil and the vanilla to the buttermilk.
- Mix the flour, baking powder, vegan protein and bicarb of soda together.
- Add wet ingredients to dry and mix till just combined.

- Cover in your chocolate sauce and top with raspberries.
